‘What does “Extra Virgin” mean?

First pressing? No, it doesn’t. Most oils, as ours, are pressed only once. Actually, the term “press” itself is misleading, most oil is extracted these days by centrifuge including ours. Olive oil is qualified by its acidity. Extra Virgin is classified as 0.8% acidity or below. High acidity kills the natural goodness of anti-oxidants and vitamins. Our oil is 0.3%.

 

Why don’t I see the acidity printed on my oil?

As with all quality oils, we state the acidity. Some so called “quality” makers of Extra Virgin use small quantities of quality oil mixed with inferior, high acidity oils. Whilst below 0.8% acidity, the product has much less anti-oxidants and vitamins. It is known that some of these popular brands are controlled by organised crime.

What does “cold press” mean?

Some oils are extracted at greater than 27ºC. This, like cooking with extra virgin oil, will destroy the goodness. Our oil is produced by "cold press". Actually, because true Extra Virgin Oil is very stable, many people do indeed use it for cooking with great success. Try it!’

 

Why does our oil have such a low acidity level?

Extremely low humidity makes Crete one of the best growing regions in the World. Low humidity means low acidity. Also, speed of harvest to press contributes to low acidity. We press within 24 hours.

 

If so low in acidity, why do I feel a slight warmth at the back of my throat?

A good question! What you can feel is the anti-oxidants in which our oil is rich.

ABOUT US

When on holiday in Elounda, Crete, we heard about a local olive oil company who had a small, working museum we could visit. As olive oil was always a very important part of our lives, we were very keen to go.

 

On our arrival we were met by Costas (a third generation family member in the business) and his very good friend Nick who conducted the tour just for the two of us. Within 10 minutes of Nick’s talk about Extra Virgin Olive Oil, we were spitting feathers!! We were furious that we’d been so badly misinformed on the subject. The thought that it was quite possible we’d been liberally and happily spreading lamp oil on our salads infuriated us. We also realised that all our friends would be in the same boat. Everyone we’ve asked about what they think qualifies olive oil as Extra Virgin has said that same, wrong thing. Just like we did. You know, that old “first pressing” idea.

 

These two delightful young men at the Farm had revolutionised our understanding on this subject. Having fallen so in love with these guys, their way of life and their passion for good, wholesome, fine tasting oil, we resolved that very day to start a business over here in the UK.

 

Our absolute aim is to spread the word about how we’ve all been so cruelly misled, to empower people to make a far more informed choice and see if we couldn’t help put a small dent into the coffers of organised crime. Oh yes, they have their oar in this business too. We would like us all to be more aware of what you’re doing next time you reach for a bottle (or can) of Extra Virgin Olive Oil. If you decide to buy your oil from us and benefit from a guaranteed top product, that would be great and we’d appreciate it. But, wherever you buy your oil, our plea is that you don’t just go for the big names without a little more research.

The Farm

Technical development has not stopped at the oil factories. Where before the millstones were turned by hand, which required a great deal of human strength or donkeys, modern machines are used today.

 

There are now two different methods of production which are machine-driven millstones or high-speed centrifuges to ensure that fruit and oil are separated. One thing remains the same with both methods. Firstly the olives have to be washed to remove the remaining leaves and twigs. Cretan olive oil has a first class quality which has continually improved over the last 20 years. The consumption per person stands on average at 29 litres a year (1/2 litre per week). Olive oil is the main, nutritional factor in Cretan cuisine and is held as the elixir of life. Today's research confirms that Cretans have the highest life expectancy of all Europeans because of the extensive use of the oil.

 

Olive oil has therapeutic effects on stomach ulcers, relieves stomach-ache and helps digestion. Because of the abundant use of olive oil, incidents of cancer are very low.

 

The pro-vitamin A and vitamin E offer protection for the skin, reduces the formation of gallstones and shows positive results in the relief of bilious colic. These vitamins also have a positive effect on growth and bone structure in children and help in the fight against diabetes.
